500g-1kg fresh apricots

1 home-made short crust pastry, for recipe click here

50-100g sugar

30g almond powder

Prepare in advance short crust pastry. Keep it in fridge.

Prepare pie tin, add a bit of oil and flour. With rolling pin spread the pastry, put in round pie tin. With fork add some air in the dough. Cook in 180 degrees Celsius for 20 minutes. Exit the pastry and cool it.

Clean in cold water apricots, with little knife cut in two and take away the nut, reserve in pot. Add sugar with apricots and cook for 15 minutes slowly as a jam. Taste to check the sugar level. Cool this preparation.

Add almond powder on the cool pastry, then apricot preparation. Cook in oven 180 degrees Celsius for 20 minutes. Enjoy!
