Aubergine's/Eggplant's Caviar (for 2 persons) Cost: 2.5€ / 1.25€ by person
1-3 aubergines or eggplants
½ lemon for juice
some sesame seeds
1 clove of garlic
salt and pepper
Prepare aubergines: prick them in some places and cook in the oven for 30 minutes in 250 degrees Celsius.
When they are cook, cut them in half and with the spoon take the pulp (attention to don’t take the grains) and reserve it in the colander. Then press with the fork in this way the pulp leave water. Then reserve in the bowl.
Add salt, pepper, lemon juice, sesame; press the garlic and olive oil. Mix.
We suggest you to check the taste when you start to add the lemon juice.
Serve cold with a toast as starter.
