Blanquette of Veal (for 3 persons) Cost: 8€ / 2.67€ by person
800g shoulder of veal
1 yolk of eggs
5cl of cream
salt and pepper
Prepare the meat: cut in big pieces. Put in the pot or pressure cooker, cover with the water (around 1,5 liters) and wait till a moment start to boil.
Skime the meat, add the carrots cut in pieces, then leek and onion with cloves inside. Add salt and pepper and close the pressure cooker, cook during 22 minutes. If you have regular pot, cover it and cook during 50 minutes.
Wen the meat is ready, take out the meat and reserve it in the warm place (protect with aluminum paper). Separate the broth and vegetables (you don't use them any more).
In the separate pot, dissolve the butter, add the flour and around 1 liter of broth. Mix till the moment start to boil.
Take the bowl with yolk, add the cream and mix. Add this preparation to the sauce and don't boil any more.
Put the meat in the sauce, boil slowly during 2 minutes and it's ready to serve!
