1 aubergine / eggplant

125g mozzarella cheese

75g tomatoes (kind "cherries")

1 clove of garlic

some parsley

olive oil


Prepare the sauce: chop the garlic, parsley leaves and reserve in the bowl. Add the pepper, olive oil and mix.

Slice the aubergine, warm up the grill and cook the aubergine during 6 minutes on both sides.

Put also the little tomatoes to cook on the grill.

When the aubergine's slices are ready, reserve in the dish and put the part of sauce on.

Take the skewers: first pick the aubergine, then mozzarella and tomato again aubergine and continue...
