Daurade Royal cooked in the salt crust (for 2 persons)
500g of royal daurade
2kg of big salt
1 white of eggs
little bit of water
Clean the fish with water, take away the internal organs, cut a little bit the tail, fins and hearing. DON'T SCALE IT!
Prepare the salt: in the big bowl put the salt, add the white of eggs and little bit of water. With the hands mix the salt.
Prepare the aluminum paper in form of the fish. Close it and start to put the salt 1cm high, put the fish and put the other salt on the fish.
Cook the fish in the oven 200 degrees for 30-35 minutes.
