Duck's filet with orange sauce (for 2 persons) Cost: 5.7€ / 2.85€ by person
1 filet of duck ~350g
˝ teaspoon mustard
˝ teaspoon sugar
1 teaspoon corn flour
Clean with water and brush the oranges. Take 3 peels from one orange, and keep during 2 minutes in boiling water. Reserve and slice them thinly.
Peel completely 1 orange and cut out the slices. Reserve.
From other 3 oranges press the juice with pulp.
Cook duck’s filet in the pan for 5 minutes on the skin side, reserve the fat in separate vessel, turn and cook more 10 minutes. When it’s ready reserve in the dish with aluminum paper on to keep the warm.
Preparation of sauce: in the pot put butter, duck’s fat, orange peel, pieces of orange and juice. Cook for 5 minutes until the moment the preparation become creamy (if not add some flour or corn flour), then add some pepper, mustard and sugar. Filter the sauce.
Cut the filet, serve with rice and sauce separate.
