Sardines filling with cottage cheese (for 2 persons) Cost: 4€
800g fresh sardines
3 tbsp. olive oil
10g small chives, some parsley leaves
60g cottage cheese
Important step is to choose very fresh sardines, ask advise to your fish merchant! Clean them, take out the intestinal organs and cut out the head. Very carefully take away the main bone just to don't separate the two filets. For more details, watch the video.
Separately prepare the marinade with olive oil, lemon juice, salt and pepper.
Put sardines one by one in flat plate and add the marinade on, cover plate with film paper and reserve in fridge for 1 hour.
Chop herbs and mix them with cottage cheese.
1 hour after exit the sardines from fridge and dry them with absorbing paper. Add 1 teaspoon of cottage cheese, roll and close it with tooth pick.
