350g flour

2 eggs

200g fresh spinach

1/2 teaspoon salt

Prepare the spinach: clean them and take away the stem one by one. We use just the green part of leaves. Mix very well in mixer with 1 tablespoon of water. Reserve.

Create with flour a little volcano, add some salt and in middle add 2 eggs with spinach preparation. Start slowly to mix together and create a ball.

Work with it for 5 minutes and let to rest on towel for 20 minutes.

Cut in 4 pieces and spread the dough with rolling pin or special pasta machine.

Cook the green pasta for 5 minutes in big volume of water. Enjoy!
