Lentil Salad (for 3 persons) Cost: 5.4€ / 1.8€ by person
For Salad: 150g lentil already cooked and cool
1 brunch of onions
1/2 apple ("Granny")
1 red onion
For Sauce: 9 tbsp. of vegetable broth
1 teasp. of vine vinegar
1 1/2 tbsp. of oil
1/2 teasp. of mustard
salt and pepper
Prepare lentil: Boil 1 volume of lentil in 5 volumes of water for 30 minutes. Reserve in bowl during the lentils are cooling.
Prepare salad: Cut the sausage in little cubes, peel the apple, take away the core and cut also in little cubes. Chop the onions, parsley and red onion. Reserve all of them in the bowl with lentil.
Prepare the sauce: in the separate bowl put the vegetable broth, oil, vinegar, mustard, salt and pepper and mix all.
Add the sauce to the salad, mix all and it's ready to serve! (For better taste protect the bowl and put for 30 minutes in the fridge).
