Mussels style "Poulette" (for 3 persons) Cost: 9/3 by person

2kg fresh mussels "Buchot"

1 tbsp. cream fresh

1 tbsp. flour

15g butter

2 shallots

3 cloves of garlic

1 glass white wine dry

2 tbsp. vegetable oil

some brunches of parsley

Prepare the mussels:  clean them in big volume of water, take away the open and broken mussels. Reserve them in the colander.

Slice thinly the shallots, press with knife garlic, separate the parsley leaves. Reserve in the bowl.

Put the clean mussels in the pot, add all the ingredients from the bowl, also wine and oil. Cover the pot and switch on the warm.

In 1 minute shake the pot and continue to cook during 6-10 minutes. Shake often.

When all the mussels are open, take out the mussels, reserve in the bowl.

Filter the juice and reserve.

Prepare the sauce: In the separate pot put the butter, dissolve it, then add flour and mussel's juice. Cook few minutes and mix.

Take away empty shells and put the sauce on the mussels.
