200g of flour
The law of pasta fresh is: 1 egg for 100g of flour. Then we start to prepare: put on the work surface the flour and mix with salt, then make the hole inside the middle and put the eggs inside.
Start to do the dough, in the end also add a little bit of water.
Put the dough inside the towel and let rest it during 10 minutes on the table.
10 minutes after, exit the dough from towel and cut in 3 pieces.
Adjust the dough with special machine for pasta fresh. Cut the tagliatelli.
Cook the pasta during 5 minutes in the water, but anyway taste before to stop the cook.
