Red Mullet Saffron sauce (for 2 persons) Cost: 2.5 / 1.25 by person

6 red mullets

25g butter

1 shalle="2">1 shallot

10cl white vine dry

1 tbsp. organic corn flour

a bit of vegetable broth organic

1 dose saffron in powder = 0.1g

salt and pepper

Prepare red mullets: clean the stomach and reserve on absorbing paper.

Cut 6 pieces of baking paper. Take one red mullet, put on baking paper, add a pinch of salt and black pepper and one "point" of oil. Close as a sweet. Reserve in cake tin to cook in oven for 20 minutes in 180 degrees Celsius.

Chop very thinly the shallot. In little pot add white vine with 15cl water and vegetable broth, when start to boil add shallots and cook 5 minutes. Add corn flour, saffron and half of cold and diced butter. Mix, reserve on the side.

When the fishes are ready, finish to prepare the sauce to add other part of butter! Serve immediately
